Summer is the time of year to have
salads, especially at lunch time when our digestion is strongest.
I have gotten several requests for salad dressing recipes. I eschew store bought dressings as most have too much sugar, and not the best quality oils. It is easy to make your own. Here are 2 recipes.

My go to Summer Dressing:
¼ c of lemon or lime juice, you can
include or add 1 T of rice wine vinegar too.
½ t salt
1/8 to ¼ t raw sugar
a few twists of black pepper (can leave
out for Pitta, more for Kapha)
1 T or to taste chopped fennel and/or
dill fronds (optional)
¾ c good quality extra virgin olive
oil
Mix all ingredients except oil, beat
with a fork, then add the oil and mix again. Store in a cool place,
you can refrigerate.
Another
Summer Dressing (adapted from Eat, Taste, Heal):
6 T
oil (combination of extra virgin olive and sunflower)
3-4 T
plain yogurt (can leave out for Kapha and add 1 more T of water)
3 T
water
2 ½
T fresh lemon juice
2 T
chopped fresh dill and/or fennel fronds
1 ½
to 2 t (teaspoons) maple syrup
¼ t
salt
Put in blender, and blend
until smooth. Store in refrigerator.
