And below is another soup recipe, perfect for cold January days.  This is a fairly simple lentil soup, middle east style.

Enjoy, and I hope to see you on Zoom for one or more of these activities!

Middle Eastern Lentil Soup with Spinach

(based on recipe from Classic Vegetarian Cooking from the Middle East and N. Africa)

1 c brown or green lentils, rinsed

8 to 9 c water

¾ t salt or more to taste

½ turmeric powder

¼ c chopped fresh cilantro

1 large onion, finely chopped

1 to 2 cloves garlic, crushed

2 T ghee

1 to 2 T olive oil

10 to 16 ounces fresh spinach (or other tender greens)

 ½ c chopped parsley

3 T fresh lemon juice

¼ t black pepper or to taste

Place lentils, water and ¼ t salt in a medium-large saucepan and cook over medium heat until lentils are tender, but still intact and slightly firm.

Meanwhile saute onions, garlic and ½ salt  in a frying pan until the onions turn light brown.  Add to the cooked lentils along with the turmeric, spinach, and half the parsley, and simmer until the spinach is cooked.  Add the lemon juic and black pepper and simmer for another minute.  Add olive oil and stir.  Garnish with remainder of parsley.  Serves 4 to 6.
